Recipe: Low carb potato skins

I had some sweet potatoes lying around that needed to be used & decided to make them into potato skins!

What you will need:

  • Baking sheet
  • 1 sweet potato
  • Olive oil
  • Himalayan pink salt & pepper
  • Cheese
  • Toppings: bacon, green onion, sour cream.

Instructions:

  • Preheat your oven to 400
  • Slice the sweet potatoes into thin round slices
  • In a large mixing bowl, pour in 3 tbs of olive oil, 1 tbs of pepper, and 1sp of salt.
  • Mix the slices in the bowl with the oil and spices
  • When well mixed and coated, lay the slices on the baking sheet in one even layer
  • Bake on the top shelf of your oven for 25 minutes
  • Take out the baking sheet and add the cheese to the top of the potato slices, put back in the oven for two minutes
  • Remove the baking sheet and add any other toppings & serve!
